  • 1 tablespoon olive oil
  • 1 large onion (yellow or white onion)
  • 1 large tomato, sliced
  • ½ cup hummus (plain or flavored)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 sandwich bread (use your favorite)


  • Sauté The Onions:
    Start by sautéing white or yellow onions with a little bit of olive oil in a large skillet until golden brown around the edges. Then lower the heat and add 2 tablespoons of water, stirring every minute for 10 minutes until the water evaporates and the onions become caramelized.

  • Assemble The Sandwiches:
    Layer both inside slices of bread with a generous amount of hummus. Add a layer of sautéed onions, then sliced tomato and a sprinkle of salt & pepper.

  • Grill The Sandwiches:
    Add 1 tablespoon of olive oil to a hot skillet or grill pan and cook 2-3 minutes until the bread is crispy and toasted. Before flipping, drizzle or brush the top with olive oil. Using a good size spatula, flip and cook for another 2 -3 minutes until the bread is golden once again and the filling is warmed through and the hummus becomes gooey like cheese.
  • Slice and Serve:
    Remove the grilled sandwich from the pan and use a serrated knife to cut the sandwich in half. Serve piping hot and pair with salad or a cup of soup.



I love making this sandwich as part of my weekly meal prep rotation because it’s so easy to make. Hummus easily stores in the fridge and the onions can last up to 5 days in an air-tight container once cooked.
  • Fridge: store onions in an air-tight container for up to 5 days in the fridge, pre cooked. Reheat in a small microwaveable bowl for 1 minute, stirring halfway. Once the onions are reheated, begin assembling the sandwich.

  • Shredded vegan cheese
  • Plain hummus sprinkled with Everything Bagel Seasoning


What is the best hummus to use for hummus sandwich?
I recommend using a plain classic hummus. You can also use a flavored hummus spread like olive, artichoke, garlic, jalapeño, dill or roasted red pepper.
How do you make perfectly caramelized onions?
For the best caramelized onions, simply cook them over low heat for 30 minutes, stirring often, until soft, tender and golden. Add in a splash or two of water or veggie broth if the pan gets dry.
Can you use a panini press to make hummus and onion sandwich?
Absolutely. Press the sandwich for 3 minutes on each side until golden brown.
What are the best breads to use?
I like using rye or sourdough bread. You can use white bread, wheat, Italian sliced bread, honey bread, whole grain bread, etc.
