Kale Caesar Salad Recipe made with creamy vegan caesar dressing. This salad is super easy to make and delicious!

Ingredients
  

  • 2 bunches curly kale or lacinato kale
  • 1 cup soaked cashews soak in hot water for 30 minutes
  • 5 tbsp lemon juice approx. 2 lemons
  • 1 tsp dijon mustard
  • 8 cloves minced garlic
  • 4 tsp capers
  • 4 tbsp extra virgin olive oil
  • ½ cup hot water used to thin dressing
  • 1 tsp stevia

Instructions
 

  • To prepare the caesar dressing, place the lemon juice, lemon zest, dijon mustard, soaked cashews, minced garlic, hot water, stevia, capers and olive oil in a blender and combine for 30 seconds until smooth.
  • Add in salt and pepper to taste. Pour in more hot water for a thinner caesar salad dressing and blend.
  • Taste and adjust seasonings as needed. Add more stevia for a sweeter dressing, lemon juice for brightness, capers for 'anchovy' flavor or olive oil for more creaminess.
  • Add the curly kale or lacinato kale to a large bowl. With both hands, massage the kale until oils are released and the leaves begin to relax.
  • Add desired amount of vegan caesar dressing to the kale and gently toss. Sprinkle in vegan parmesan cheese or chickpeas for crunch.

Notes

  • For a sweeter dressing, drizzle in some maple syrup or stevia
  • If the caesar dressing is too thick, add in some more hot water to thin it out
  • Add some miso paste for saltier caesar or add in caper brine juice
  • The dressing lasts in the refrigerator for up to 10 days. You can make the vegan caesar dressing in advance and store in an air tight container
  • For larger servings, you can double or triple the recipe as long as you keep the ratios the same
WAYS TO DRESS UP THE CAESAR SALAD RECIPE:
  • Add toasted chickpeas for a crunch. Season with curry or chili for some heat.
  • Add vegan Parmesan cheese to the dressing. This will make it cheesy and bring you comfort with classic caesar flavors.
  • Add hemp seeds or sunflower seeds to the kale salad. Enhance the texture by adding in a crunch that is packed with healthy fats and protein.
  • Substitute romaine lettuce for the kale. You can make this a chopped caesar salad and serve it table side. This will impress all of your guests.
  • Grate extra lemon zest on top before serving for an extra zing.
  • Throw in some slaw with the kale to make the caesar salad recipe more wholesome. You can use broccoli slaw or cabbage slaw. Anything tastes good with caesar dressing
  • And finally, garlic croutons. Toast some bread, add olive oil and rub on minced garlic and you have delicious, crunch, garlic-y croutons for the caesar.
