- White or yellow onion
- Tomato
- Sandwich bread

- Sauté the onions
Start by sautéing white or yellow onions with a little bit of olive oil in a large skillet until golden brown around the edges. Then lower the heat and add 2 tablespoons of water, stirring every minute for 10 minutes until the water evaporates and the onions become caramelized.
- Assemble the sandwiches
Layer both inside slices of bread with a generous amount of hummus. Add a layer of sautéed onions, then sliced tomato and a sprinkle of salt & pepper.
- Grill sandwiches
